is one of my family favourite food
especially when cooked with fresh dried shrimp and belacan.
Here is how my mum cook our
Pekan Chinese styled sambal belacan.
Ingredrient:-
5 small onions cut into smaller pieces
10 piece dried chili soak in boiling hot water to soften it
about 100g of dried shrimp
2 slice of belacan(Shrimp paste block)
300g of petai(stink bean)slice into its half
1 tea spoon of sugar
3 tablespoon of cooking oil.
method:-
add 1/4 cup of water into the blender
and blend the cut onions(leave a few to be fried with oil),
dried chili, belacan and shrimp to the desired fineness
or if you like the old traditional way,
pound it in a mortar and pestle.(no need to add water here)
Heat 3 tablespoon of cooking oil in a frying pan,
once hot add the remaining few piece of onion pieces in,
fry for a few seconds to add some aroma to the sambal
and then pour the blended ingredient into the pan.
Add a tea spoon of sugar ,heat and stir it well until it's bubbling
then add the petai in
stir to mix and add a bit of water
close the pan lid until it's steaming.
And our sambal belacan is now ready to be eaten.
